I Say Satay Aubergine

 

For the aubergine, slice into medium pieces lengthways, and put to one side. Mix plain flour, water and a pinch of salt to make a paste. Put your breadcrumbs on another plate. Coat your aubergine slices in the flour paste, followed by a dip in the breadcrumbs. Lay your aubergine slices on a baking tray, lined with baking paper, drizzle with oil and bake for 15 minutes on each side at 200C. Increase heat to 240C and cook for a further 10 minutes until crisp. 

For the radishes, slice and cover with just boiled water, salt, mirin and white wine vinegar. Stir and leave to cool. 

Grab yourself a jar of I Say Satay sauce, spoon desired quantity into a non stick pan, add a splash of water and heat. Dollop onto your aubergine, and then sprinkle over your radishes and spring onions for some extra colour and flavour.
